Tomato Soup
3 1/2oz tomato
1 garlic clove, minced
1/2 cup water
3/4 tsp basil
1/2 tsp onion powder
salt & pepper to taste
Preheat Broiler
Cut tomato in half and place on cookie sheet flat side down. Broil 5-10 min until skin is blistered and blackened. Let cool and then remove skin. In a medium sized sauce pan, heat 1/4 cup water. Add onion powder and cook for 5 min. Add garlic and cook for 2 min. While that is cooking, place tomato in food processor or blender and puree until smooth. Stir tomato puree into saucepan and add rest of water. Bring to a boil, reduce heat and simmer 5 min. Stir in basil and season with salt and pepper.
